Smashed Pumpkin Brekkie – Serves 1

You will need:
4 Biscoff (Lotus) biscuits (8g each) – blitzed in a food processor or placed in a zip-lock bag and smashed with a spoon
260g high-protein yogurt – we used Chobani Fit vanilla
2 serves of protein powder of your choice – we recommend vanilla for this recipe
80g fresh blueberries
Lemon zest, approx. ¾ tsp
What to do:
- Blitz your biscuits in a food processor until you have a fine crumb
- Using a rubber spatula, mix your yogurt and protein powder together until well combined (no lumps).
- Add the lemon zest and mix through.
- Build your cups by adding the Biscoff crumb to the bottom, then your protein yogurt, and finally top with blueberries.
- Enjoy straight away or leave to set in the fridge overnight (maximum).
Perfect for breakfast, dessert, or a healthy snack.
