Smashed Pumpkin Brekkie – Serves 1

You will need:
90g roasted pumpkin (raw weight, leftover from dinner)
1 slice (40g) seeded sourdough, toasted
40g natural cottage cheese
2 eggs
Salt, pepper, and pumpkin seeds to top
What to do:
- Gather all your ingredients.
- Reheat your pumpkin wedge gently in the microwave or in a low-temperature oven.
- Cook your eggs by adding them to a pot of boiling water and cooking for 6 minutes. Remove from water and let them sit in a bowl of ice water.
- Toast your sourdough. While it cooks, peel your eggs.
- Spread the cottage cheese over your toast.
- Smash your pumpkin and add it on top.
- Drizzle your honey over the pumpkin and top with your eggs.
- Season with salt, pepper, and pumpkin seeds. Enjoy!
