Spicy Tuna Sanga – Serves 1

Calories: 359 | Protein: 38g | Carbs: 40g | Fat: 6g

Tuna mix:

  • 110g can of tuna in spring water (drained weight)

  • 30g high protein Greek-style yogurt

  • Small squirt of sriracha sauce

  • Squeeze of lemon

  • 1 tsp extra virgin olive oil

  • Salt & pepper

  • 5 cherry tomatoes, finely chopped

  • 1 tbsp finely diced red onion

  • Sandwich:
  • 2 slices good-quality wholemeal sourdough (bakery bought if possible) or regular wholemeal bread

  • Red cabbage, finely sliced (or use a potato peeler to create thin strips)

  • Green leaves of choice

  • Leftover roasted eggplant/aubergine or other roasted veg

What to do:

  • Toast one side of your bread slices by placing them under the grill for a few minutes.
  • Make your tuna mix by combining all the tuna ingredients.
  • Spread a small amount of yogurt on one slice of bread (toasted side).
  • Arrange your cabbage, greens, and roasted eggplant or other roasted vegetables on top.
  • Add the tuna mix, pressing it down gently with the back of a spoon.
  • Top with the other slice of bread. Enjoy!
