Smashed Pumpkin Brekkie – Serves 1

You will need:

  • 90g roasted pumpkin (raw weight, leftover from dinner)

  • 1 slice (40g) seeded sourdough, toasted

  • 40g natural cottage cheese

  • 2 eggs

  • Salt, pepper, and pumpkin seeds to top

What to do:

  • Gather all your ingredients.
  • Reheat your pumpkin wedge gently in the microwave or in a low-temperature oven.
  • Cook your eggs by adding them to a pot of boiling water and cooking for 6 minutes. Remove from water and let them sit in a bowl of ice water.
  • Toast your sourdough. While it cooks, peel your eggs.
  • Spread the cottage cheese over your toast.
  • Smash your pumpkin and add it on top.
  • Drizzle your honey over the pumpkin and top with your eggs.
  • Season with salt, pepper, and pumpkin seeds. Enjoy!
