Ingredients

  • 120g Chicken grilled breast (raw weight)

  • 40g Greek yoghurt (fat free)

  • 1 Tbsp EVO oil

  • Lemon

  • Chilli flakes

  • Salt and Pepper

  • 1/2 Cucumber, chopped

  • 5 Cherry tomatoes, quartered

  • Red onion, finely chopped

  • Handful of spinach, chopped

  • Half of both parsley & coriander, chopped

  • 1 Slice of (slightly stale) wholemeal sourdough, chopped into cubes

  • Sesame seeds

Directions

  • Use 1/2 of your oil to coat your chicken breast, season with salt & pepper and grill in a in a medium heat pan
  • While your chicken cooks, throw all your salad bits into a mixing bowl then add the rest of your oil along with the lemon, chilli flakes and S&P, mix well.  
  • Remove your chicken from pan and with the pan still on the heat throw in your bread cubes toasting them until crunchy.  
  • Serve your salad in a bowl, slice up your chicken and add your bread cubes on top finishing with a sprinkle of sesame seeds
