I love making tuna rice bowls for a quick and healthy meal. It's packed with protein making it a nutritious option for lunch or dinner.

Tuna Rice

Ingredients

  • 125g Pre cooked wholegrain rice

  • Can of Tuna in olive oil (110g drained weight)

  • ½ Head of broccoli, finely chopped

  • Clove of garlic, minced and chopped

  • 1/2 Leek, finely sliced

  • 1/3 Zucchini, sliced

  • Handful of leafy greens, I chose cavolo nero

  • Handful of red cabbage, chopped and lightly pickled in lemon

  • 6 Cherry tomatoes, halved

  • 1/2 Lemon

  • Any dry spices: I used 1/3 tsp of ground turmeric, smoked paprika & cumin

  • ½ Tbsp extra virgin olive oil

Directions

  • To a fry pan on medium-low heat add ½ tbsp of extra virgin olive oil and once hot add your leeks and garlic and cook for 5 mins
  • Add your zucchini and cook until they begin to caramelize
  • *let them sit and cook, don’t toss them around
  • Add your spices, stir and cook for 1 min
  • Add your broccoli bits, stir and cook for 1-2mins
  • Add your rice, juice from your lemon, season with salt and pepper, stir and cook for 1-2mins
  • Add your leafy greens, tomatoes and can of tuna to a bowl
  • Add your rice mix and top with your red cabbage
  • And Voila! The “I don’t really have anything at home for lunch” thought is gone!
